Potato pancakes filled

Preparation:
Grate the potatoes finely with a grater. Now peel the onions and grate as well. Then blend them in with the potatoes and add potato flour and eggs and season with salt and pepper. Now heat some oil in a pan and add 2 – 3 tablespoons of potato dough and push down to get a sort of a pancake. Fry on both sides until crispy.
Now clean the mushrooms, then cut them into slices. Cut the shallots, parsley and chives into small cubes. Subsequently add the mushrooms, season and fry.
Add the cream and let it all boil. Chop the herbs finely and sprinkle them over the potato cakes
Now dice the tomatoes, cut the olives into slices and the onion into rings. Put it all in a pan add a little oil, season with salt and pepper, add the feta cheese, which you have cut into 1cm cubes. Melt the cheese and put it with all the other ingredients on top of the potato cakes.
