Vegetarian Bolognese

Ingredients:
  • 1200ml hot water
  • 300g soya granules
  • 3 tablespoons tomato paste
  • 4 tablespoons vegetable broth
  • 6 tablespoons soy sauce
  • 6 medium onions
  • 6 cloves of garlic
  • 900ml Passata
  • 600ml water
  • 3 tsp dried basil
  • 3 tsp dried thyme
  • salt
  • pepper
  • cayenne pepper

Preparation:

Prepare some hot water and stir in the tomato paste, vegetable broth and soy sauce. Last add the soy granules and let it swell. Peel the onions and cut into small cubes. Then fry them until golden yellow. Place the onions aside. Pour the soy mixture in a large pan and crush the garlic. Fry shortly and add the onions. Deglaze the onion with water pureed tomatoes and water, then season with herbs, salt and pepper. Simmer slightly for 15 minutes. This dish goes well with potatoes, rice or vegetables. The dish is quickly prepared and not time-consuming at all.
