Pea soup

Ingredients:
  • 900gr dried green peas
  • 9 medium onions
  • 3 leeks
  • 2 small or 1 large celeriac
  • 300gr bacon
  • 9 chop with fat border
  • Salt
  • Pepper
  • Bay leaves

Preparation:

Soak the green peas the night before so they can sufficiently swell. The next day cut the bacon into small pieces, or if you want, buy it already cut. Then put it in a large pot. Add the soaked peas along with the water they soaked in and cook. Make sure you cook it all on lower heat, so it does not overflow. Remove the meat from the bones and cut into small strips. Add to the peas and bacon. Clean the onion, leek and celery and chop. Add it to the rest and cook as well. If the pot is too small, cook it in portions. Put in one part, close the lid and boil down, then add more. Cook on low heat for 1 hour, stir constantly. Once the peas are soft, the soup is ready. Make sure you do not cook it for too long because it will make it all mushy. Season the soup with enough salt and pepper. Instead of the meat, you could use sausages as well. The soup is excellent for cool and rainy days.
