Semolina pudding piquant

Preparation:
Put the semolina, 3 tsp salt, milk and nutmeg in a pot, stir well and keep stirring until it boils. Give it time to swell and stir occasionally.
Turn the temperature down and let cook for a little while, stir constantly.
When this is done, blend in 300 g of Parmesan, butter and season it with salt and pepper. Now put the egg white with 3 pinches of salt into a bowl and beat with a hand mixer until stiff. Then add it to the semolina mass.
Put it all into a baking dish and sprinkle it with the remaining Parmesan. Preheat the oven to 200 ° C and bake on the top rack for about 5-7 minutes or until the cheese has a slight colour.
