Cheese noodles a la Allgäu

Ingredients:
  • 250 g flour
  • 10 eggs
  • Ca 650 ml water
  • 2 ½ tsp salt
  • 1 kg diced smoked ham
  • 1000 g grated cheese
  • 250g butter

Preparation:

Begin with whisking the eggs and salt together. Then add the flour and water. Be aware; the water has to be added spoon by spoon. Beat the dough vigorously until it bubbles. Now push the pasta dough through the noodle press. Alternatively, use a noodle grater and grate the dough straight into the boiling water. Cook the noodles until they are tender. Try one before you remove them completely from the stove. If done, put them in a colander and wait until all water has dripped off.

Next, dice the ham and fry it in a pan with butter until crisp, then mix the ham with the still warm noodles.

Now, layer noodles and cheese alternating in a bowl. Alternatively, use a heat-resistant bowl and put the cheese noodles in the oven for a few minutes. Or until crisp and golden brown.

The Cheese noodles a la Allgäu are best served with a fresh and crisp salad according to the season.
