Preparation:
Put some water into a large bowl and add the bread. When soft, crush it and squeeze as much as possible water out again. Then remove the water and put the bread back into the bowl. Cut 3 onions into small cubes and add to the bread as well as the garlic. Supplement this with 2 eggs, 3 tablespoons of mustard and be generous with the ketchup. Season with pepper, paprika and salt until the taste is right. Crush the cumin and add as well. Mix well.
Flatten the mince and season with paprika, salt and pepper as well. Now add the seasoned mince to the other ingredients in the bowl, knead until you get a dough. If necessary, add some breadcrumbs to thicken it. Now roll the mince up and shape it into a loaf. If you want, you can fill this with braised leeks or feta cheese.
Preheat the oven to 180 ° C. Put the loaf in the oven and fry until crispy on all sides. With this done, grease a casserole or any other heat-resistant pan and put in the loaf. Now just cut the peppers, carrots and tomatoes into chunks and distribute around the meatloaf. Then put it all in the oven.
To improve on the taste, add 750 ml meat broth while the meatloaf is cooking. Let it all cook for about 45 minutes to 1 hour. Take the loaf out and add a little cornflour to the gravy.
Serve the roast with veggies and boiled potatoes.
