Preparation:
Wash the potatoes and cook in a large enough pot. When finished, pour cold water over it shortly and cut into thin slices. Peel and dice the onion. Do the same with the bacon or buy it cut already. In a large pan, or several smaller ones heat up the oil. Add the bacon and fry. Then add the potatoes and fry on both sides as well. Add the onions and sauté until glassy. Season with salt, pepper, paprika and cayenne. If you like, you can beat some eggs and pour them over the potatoes. – In this case, you would need 10 eggs. Pour them over the potatoes. The eggs will hold the potatoes nicely together. If the eggs are served scrambled or fried, you will need 20 eggs. Make sure that the eggs are cooked properly because in the summer there is always the risk of salmonella. This food is very filling and can be easily prepared in larger as well as smaller portions.
