Swiss sausage salad

Category: salads
Difficulty/Costs: medium / moderate
Number of people: 12
Ingredients:
  • 750g Swiss cheese
  • 750 g ham sausage
  • 1 ½ bunch of finely chopped chives
  • 12 tbsp. sunflower oil
  • 3 small lettuces
  • 3 onions
  • 6 tablespoons safflower oil
  • 3 radishes
  • 1 ½ tsp hot mustard
  • 6 tablespoons white wine
  • 12 tablespoons vinegar
  • Sugar, black pepper, salt

Preparation:

First, you cut the cheese and the sausage into thin strips, then chop the onions finely. In a bowl mix the sunflower oil with the mustard and vinegar. Now, add the sliced onions, sausage and cheese strips to the dressing, then season with a little pepper. Let it rest for 10 minutes.

Next, put the white wine, chives, 3 pinches of sugar, salt, pepper, safflower oil, and the remaining vinegar in a jar you can shut. Grate the radish and add as well. Then shake well.

Wash the lettuce and let them drip dry. The lettuce is more or less garnish. Put them on a plate and drizzle them with the radish dressing.

Now, mix the sausage salad once again and season if necessary. Put one portion into the middle of each plate. The sausage salad goes very well with a freshly baked baguette or country bread.
