Oranges with mousse Creme Fraiche

Preparation:
Start by peeling the oranges, then cut filets out of the oranges. You can extract the juice from the skin and collect for further use.
Take 12 small bowls and place one orange fillet into each bowl. Now blend together the Orange Back, Crème Fraiche and the orange juice. If available, use a hand mixer.
In the meantime, soak the white gelatine in cold water. Now, warm up the orange liqueur and the honey for about 2 – 3 minutes. Remove the gelatine from the water, extract all excess water and add to the honey and orange liqueur. When smooth, add it to the cream.
Whisk the cream until stiff, then add to the cream as well. Next fill the bowls with the orange fillets with the cream.
Put into the fridge for up to 2 hours. Remove shortly before serving. Turn it upside down on a plate and garnish with chocolate sauce.
