Apple compote

Preparation:
Peel and remove the core of the apples; cut into eighths. Then cut into thin slices and sprinkle with lemon juice. This will prevent the apple from getting brown. Bring the apple juice, vanilla beans and cinnamon to the boil. Simmer for about two to three minutes. Then remove the cinnamon sticks and vanilla beans. Add the apples and simmer for another 5 minutes until the apples are crunchy. This can vary from apple to apple. Stir the cornstarch into 20 tbsp. of apple juice. Add to the apple compote and boil. Then refrigerate. You might also add raisins for apple compote. This rounds up the flavour. However, many adolescents don’t like it. Better clarify that before adding them. Leave the applesauce to cool. That will also enhance the flavour. Serve it with whipping cream. Sprinkle with a mixture of cinnamon and cocoa. The preparation time is about 1 hour. Even unskilled chefs can do that!
